My mom was so good about celebrating holidays when we were little. No matter how big or small, she’d always do something special for my brother and I to mark the day. I have a lot of fond memories of unique holiday-themed breakfasts (like red heart pancakes on Valentine’s Day) and it’s a tradition I like carrying on with my little ones!
And you know your kids are going to love any breakfast food you turn green, so why not make a family favorite – donuts! This Mint Chocolate Chip Donut recipe is fabulous anytime of year, but it’s totally perfect for St. Patrick’s Day! I can’t wait for you to give these a try!
St. Patrick’s Day Donut Ingredients
You can make these the night before in case you want to save time in the morning, but there’s nothing quite like donuts fresh from the oven! Either way, they’ll taste delicious! Just make sure you put on something green before you serve them… like maybe this darling apron?!
Before you start baking, make sure you have everything you need on hand. The full recipe is below, but here’s a quick look at the ingredients:
- Flour
- Sugar
- Mini Chocolate Chips
- Baking Powder
- Salt
- Milk
- Eggs
- Unsalted Butter
- Semi-Sweet Chocolate Chips
- Heavy Whipping Cream
- Mint Extract
- Mint Green Food Coloring
- Donut Baking Tray (I really like the silicone ones too)
- Large Piping Bag
Mint Chocolate Chip Donut Instructions
Now that you have your supplies, let’s bake! Similar to a cake, you’ll combine all of your dry ingredients in one bowl and your wet ingredients in another bowl, then slowly add the dry to the wet, stirring until completely combined. Next, you’ll fold in your mini chocolate chips and your batter is done!
If you have a really steady hand, you can spoon the batter carefully into your donut baking tray. Or if you prefer to cut down on the mess, transfer your batter into a piping bag and use the piping bag to fill the donut tray. Either option works – it’s just your personal preference.
You’ll bake them until they’re golden brown, remove them from the oven and let them cool for about 5 minutes before placing them on a wire rack.
Meanwhile, make your chocolate ganache by heating your whipping cream in a small pot on the stove until it’s steaming. Place your chocolate chips in a heat-proof bowl and then pour your hot whipping cream over the chocolate chips. Let them sit for about a minute and then whisk until smooth.
While the chocolate ganache is still warm, pour it over the top of the donuts to create a gorgeous silky chocolate glaze. Let is set for about 3 minutes and then sprinkle your mini chocolate chips on top. Let the ganache set just a little bit longer (if you can resist) before serving. And then, enjoy!

- 2 cups all-purpose flour
- 3/4 cup sugar
- 1 cup Mini Chocolate Chips
- 2 tsp baking powder
- 1/2 tsp kosher salt
- 3/4 cup whole milk
- 2 large eggs
- 2 TBSP unsalted butter melted
- 1 tsp mint extract
- 2-4 drops mint green food coloring
- 1 cup semi-sweet chocolate chips
- 1/2 cup heavy whipping cream
- 1/4 cup Mini Chocolate Chips

- Preheat oven to 350 degrees and spray a 6 cavity donut pan with baking spray.
- In a large bowl, combine the flour, sugar, baking powder and salt; whisk until combined.
- In another large bowl, whisk together the milk, eggs, butter, mint extract and green food coloring until combined.
- Slowly add the dry ingredients into the wet ingredients, stirring until combined.
- Fold the mini chocolate chips into the batter.
- Transfer your green donut batter into a piping bag to easily fill the donut cavities in your baking tray. Otherwise, carefully spoon the batter into the tray.
- Bake for 10-12 minutes or until slightly golden brown.
- Remove the donuts from the oven, allowing them to cool for 5 minutes before transferring them from the pan to a wire cooling rack.
- Using a small pot, heat the heavy whipping cream until steaming.
- Meanwhile, place the chocolate chips in a heat-proof bowl and once the whipping cream is hot, pour it over the chocolate chips.
- Let the mixture sit for about one minute and then whisk it until smooth.
- Pour the warm glaze over the donuts and allow the ganache to set for 3 minutes.
- Sprinkle the mini chocolate chips on top and let the ganache completely set. Serve and enjoy!
