Breakfast and brunch are my favorite meals! There are so many tasty dish options and it’s always nice to have something sweet to pair with more savory entrees. And that’s just one reason you’ll love this Blackberry Vanilla Bundt Cake recipe! The other reason? It’s super easy and quick and gives you another excuse to put your Instant Pot to work!
Blackberry Vanilla Bundt Cake Recipe
The full recipe and directions are below, but I’ll quickly walk you through the simple steps to getting this beautiful cake on your breakfast table. You’ll begin by gathering your ingredients. The key ingredient of course is fresh blackberries, so you’ll want to make sure you can get some from the store – the bigger and juicer the better!
You’ll begin by lightly pulsing your blackberries in a food processor. You want them crushed, but not completely obliterated. In another bowl, prepare your vanilla cake mix by adding in the eggs, water and oil. Then gently fold your crushed blackberries into the cake mix.
Next, you’ll pour the cake batter into a greased and floured 7-inch bundt pan and gently lower it into your Instant Pot (you’ll see more specific direction in the instructions below). Then seal it and cook it on high pressure for 35 minutes.
Allow the cake to cool completely and in the meantime, make the vanilla glaze with powdered sugar, milk and vanilla extract. You’ll drizzle it over the top of the bundt cake and allow it to harden and set. Now you’re ready to serve! Serve each slice with several fresh blackberries and enjoy!

- 1 box French Vanilla cake mix
- 3 eggs
- 1 cup water
- 1/3 cup oil
- 1 cup blackberries, slightly mashed plus more for garnish
- 1 cup powdered sugar
- 1 tsp pure vanilla extract
- 2-4 TBSP milk

- Lightly pulse the blackberries in a food processor to mash them up. Set aside.
- In a large bowl, mix together the vanilla cake mix, eggs, water and oil.
- Gently fold in the blackberries to the cake batter.
- Grease and flour a 7-inch bundt pan.
- Pour the batter into the bundt pan.
- Add 1 cup water to the inner bowl of your Instant Pot. Place a trivet inside.
- Make a foil sling and carefully lower the filled bundt pan on top of trivet in the Instant Pot. Loosely fold the foil sling over the top of the bundt pan.
- Close the lid and set to sealing. Cook on high pressure for 35 minutes.
- Use the quick pressure release and then let the cake cool in the pan on a cooling rack for 30-60 minutes. Next, gently use a knife to separate the cake from the sides of the bundt pan and empty the cake onto a wired rack.
- Whisk together all ingredients in a medium bowl until smooth.
- Pour the glaze over the bundt cake and allow it to drip down the sides of the cake.
- Let the glaze harden for about 20 minutes before serving. Slice the cake, add some additional fresh blackberries for garnish and enjoy!
