Blackberry Vanilla Bundt Cake
  1. Lightly pulse the blackberries in a food processor to mash them up. Set aside.
  2. In a large bowl, mix together the vanilla cake mix, eggs, water and oil.
  3. Gently fold in the blackberries to the cake batter.
  4. Grease and flour a 7-inch bundt pan.
  5. Pour the batter into the bundt pan.
  6. Add 1 cup water to the inner bowl of your Instant Pot. Place a trivet inside.
  7. Make a foil sling and carefully lower the filled bundt pan on top of trivet in the Instant Pot. Loosely fold the foil sling over the top of the bundt pan.
  8. Close the lid and set to sealing. Cook on high pressure for 35 minutes.
  9. Use the quick pressure release and then let the cake cool in the pan on a cooling rack for 30-60 minutes. Next, gently use a knife to separate the cake from the sides of the bundt pan and empty the cake onto a wired rack.
Vanilla Glaze
  1. Whisk together all ingredients in a medium bowl until smooth.
  2. Pour the glaze over the bundt cake and allow it to drip down the sides of the cake.
  3. Let the glaze harden for about 20 minutes before serving. Slice the cake, add some additional fresh blackberries for garnish and enjoy!
