I’ll be honest, I love a glass of champagne! It’s simple, elegant and easy to dress up – it’s a hostesses dream (check out our post with 20 Champagne Cocktail Ideas too)! I had seen champagne cocktails on Pinterest with gold flakes in them and they were mesmerizing, so I couldn’t wait to try a version with them myself!
St. Patrick’s Day Champagne Cocktail Ingredients
Your tendency may be to go green when it comes to your St. Patrick’s Day cocktail, but perhaps you’re like me and don’t have a lot of green liquors lying around your pantry. However, you may have some sparkling wine or champagne – or could easily add that to your next Amazon Fresh Delivery! Actually, I love this cocktail because I can have all the ingredients delivered to my house (thank you Amazon) or I can have someone bring them to my car (I promise I’m not lazy, I’m just not much of a shopper!).
Here’s all you need to make these festive sparkling St. Patrick’s Day Cocktails:
- Champagne or sparkling wine
- Edible gold leaf for drinks
- Rainbow ribbon candy
- Cocktail skewer (I used one from this stainless steel set)
- Green sugar sprinkles and corn syrup (optional)
Once you’ve gathered your ingredients, you’re ready to make these beauties!
St. Patrick’s Day Champagne Cocktail Instructions
Just before your guests arrive, begin assembly for your cocktails. You can do everything but pour the champagne before your party starts to save yourself time and sanity during your event. Here are your step-by-step instructions…
Step 1: Rim Your Glass
You’ll begin assembling your Gold Under the Rainbow Cocktail by rimming your champagne glass in green sprinkles. This step is optional, but for St. Patrick’s Day, I think it’s a fun addition. You can use water or something stickier like corn syrup to get your sprinkles to stick. I dipped the rim of my glass in just a little corn syrup before dipping it into the green sprinkles. Very festive, right?!
Step 2: Prep Your Gold Leaf
The edible gold leaf I got comes in a glass vial and includes instructions. I was a little nervous about trying this for the first time, but it was actually incredibly easy! All I had to do was fill the vial to the red line with champagne and shake until the gold leaf broke down into the size flakes I wanted for my drinks.
Next, you’ll pour a little bit into the bottom of each champagne glass. A little goes a long way, so don’t over do it. If you don’t want to make each cocktail on the fly at your party, go ahead and pre-pour your gold leaf into the bottom. It has a little liquid so it won’t stick to your glass and when you pour the champagne in later, it should swirl up nicely for an impressive effect!
Step 3: Skewer Your Rainbow
Take your rainbow candy strip and your cocktail skewer and pierce the candy into the shape you want for your drink. I wanted mine to sit on top of my glass rather than in it, so I opted to weave the ribbon onto the skewer. You could also arch it so it’s in the shape of a rainbow or stick part of the candy down into the drink – it’s really up to you and how you want to present your drink.
I’d recommend preparing a handful of these before your party and placing them on a pretty platter so guests can easily pick one up without having to get sugar all over their fingers.
Step 4: Add Your Champagne and Enjoy
Now all that’s left is to pour in the bubbly, watch your gold flakes dance around and enjoy your party! I’d recommend setting up a station with your rimmed cocktail glasses with gold leaf in the bottom and a tray with rainbow skewers next to a chilled bottle of champagne. That way, guests can help themselves when they’re ready and the bubbly stays cool!
