Begin by rimming your glass with green sprinkles (if desired). You can use water or something like corn syrup that’s a little stickier to get the sprinkles to stick to your glass.
Prepare your gold leaf according to the directions. You won’t need very much in each glass to make a big impression!
Skewer your cocktail pick with the rainbow candy strip. You can arch it up like a rainbow or weave it back and forth.
Pour in your champagne, swirl your glass to move the gold leaf around, top with a skewered rainbow candy and enjoy!
