The sun is shining, the weather is warming up and it’s the perfect time to enjoy a fresh spring cocktail on the back porch! I love incorporating seasonal elements into my food and drinks and think this fresh Sweet Ginger Gold Spring Cocktail recipe does a great job of doing just that! Usually I would suggest how perfect this cocktail would be for a spring party, bridal shower or even for Easter brunch, but in times such as these… you’ll probably be making it for yourself! It’s still a great way to end the day or enjoy the weekend. And if you share the recipe with a few of your girlfriends, you could host a virtual happy hour and enjoy it together!

Spring Cocktail Recipe
This whiskey based cocktail features a homemade ginger honey syrup, which adds the perfect balance of sweetness to the drink! Ashley also made clover ice cubes for the cocktail, so if you want to do the same, make sure you plan ahead so they’re ready when you are!
You may be able to find some edible fresh clover for sale at Whole Foods or a store like Sprouts, or you can grab some seeds from Etsy and grow your own! Alternatively, I think edible flowers would be gorgeous in ice cubes for this drink too!

You can see Ashley also rimmed her cocktail glass with gold sprinkles! This is a fun and festive touch that adds a little pizazz to the drink!
When you’re ready to make your cocktail, begin in the kitchen by making your simple syrup. You’ll bring some ginger, honey and water to boil in a pot and then simmer for about ten minutes. The delicious golden mixture will need to cool and then you can strain it into a pitcher or a bottle (if you just want to make one or two drinks now and a few more tomorrow night). I love these two beautiful options for serving this cocktail…
Next you’ll add eight ounces of your favorite Irish Whiskey and the juice of two lemons to the ginger honey syrup in your bottle or pitcher. Stir or shake to combine and then you’re ready to pour! If you really want to kick your drink up a notch, add some edible gold leaf like Ashley did before you pour the cocktail into the glasses! It’s really beautiful in the drink (we used it in our Gold Under the Rainbow Cocktails too)!



Yum! I don’t know about you, but my mouth is watering and I can’t wait to make a batch for myself! Add a gold and white paper straw to complete the look and you’re officially party ready… even if it’s a party of one (for now)! - 8 oz Irish Whiskey
- 2 lemons you'll only use the juice
- gold sprinkles for rimming your glass
- edible gold leaf for garnish
- 4 oz grated ginger
- 2 cups Honey
- 1 cup water
Ingredients
Sweet Ginger Gold Cocktail
Ginger Honey Syrup
Clover Ice Cubes

- Add the grated ginger, honey and water to a pot and bring to a boil.
- Turn the heat to low and simmer for 8-10 minutes, stirring occasionally.
- Remove from heat and allow to cool.
- Strain the mixture into your serving pitcher or bottle.
- Snip clover heads or edible flowers and distribute them into the ice cube trays.
- Pour distilled water into your ice cube trays.
- Place in freezer until frozen. Add 2-3 ice cubes to each glass before serving.
- Add 8 oz of Irish Whiskey and the juice from 2 lemons to the ginger honey syrup in your pitcher or bottle. Stir or shake until mixed.
- Rim the edges of your cocktail glasses with gold sprinkles, add a few ice cubes and sprinkle in some edible gold leaf.
- Pour the cocktail into your fancy glasses and enjoy!
