Eggnog Cake Instructions
  1. Preheat oven to 350 degrees.
  2. Spray three 9-inch inch round cake pans with baking spray.
  3. Using a standing mixer, beat the butter and sugar until light in color.
  4. Add in the vanilla and sour cream and beat until combined.
  5. Beat in 2 egg whites at a time, making sure to scrape down the sides. Continue to beat until all eggs are combined and smooth.
  6. In another bowl, combine all the dry ingredients and whisk until combined.
  7. In another bowl, combine the eggnog and water and whisk until combined.
  8. Gradually beat in half of the dry ingredients.
  9. Beat in the eggnog mixture until combined.
  10. Beat in the remaining dry ingredients until combined.
  11. Divide the batter evenly between the 3 cake pans and bake for 25 minutes.
  12. Allow the cakes to cool completely before removing them from the pans.
  13. Using a cake leveler, remove the domes from the tops of each layer of cake.
  14. Place one layer of cake onto a cake board or your cake stand to begin assembly.
Eggnog Frosting Instructions
  1. Using a standing mixer, beat together the butter and shortening until smooth.
  2. Beat in 5 cups of powdered sugar until combined and smooth.
  3. Beat in the eggnog, rum and nutmeg until smooth.
  4. Beat in the remaining powdered sugar until smooth.
  5. Scoop 1 cup of frosting into a large piping bag with a star tip.
  6. Scoop 1 1/2 cups of frosting onto the first layer of cake on your cake stand and smooth the frosting evenly.
  7. Place the second layer of cake on top of the frosting and scoop another 1 1/2 cups of frosting onto the top of the cake layer, spreading it out evenly.
  8. Place the last cake layer on top of the second layer.
  9. Using the remaining frosting, frost the entire cake, smoothing evenly.
  10. Pipe dollops of frosting around the top edge of the cake.
  11. Place into the refrigerator overnight.
  12. Cut, serve slices and enjoy!
